Flavour character and applications
Its roasted coffee, smoky and burnt notes make it a useful ingredient to evaluate in coffee, roasted nut and savoury flavour compositions. A note from flavour chemistry
A sensory study of roasted Arabica coffee identified 2-furfurylthiol among the compounds with the greatest influence on coffee flavour. This helps explain why a small sulphur component can matter so much within a much larger mixture of coffee volatiles.
