The chemistry of a recognisable fish-like aroma
Trimethylamine, or TMA, has a distinctive fish-like smell. Research on marine protein hydrolysates demonstrates how enzymes can oxidise TMA into trimethylamine N-oxide (TMAO), a related molecule described as odourless in the study. The sensory contrast illustrates how a small change in chemical structure can alter aroma.
