Flavour character and applications
Evaluate the bean grade in creamy, nutty and roasted flavour compositions where a beany undertone is useful. A note from flavour chemistry
Sulfurol is also recorded as 4-methyl-5-thiazoleethanol. Its structure combines a sulphur-and-nitrogen thiazole ring with a hydroxyethyl side chain, illustrating how one flavour molecule can contain several distinct chemical features.
