The Nutty Boys of the F&F industry, pyrazines are widespread, especially in cooked foods, where they are formed by the Maillard Reaction between sugars and amino-acids. 2,3,5-Trimethylpyrazine [TP0300] is the best known and a "typical" pyrazine; we also have it available as a Natural [NP1300]. 2-Acetylpyrazine [AP0100] has a powerful, long-lasting and highly diffusive biscuity odour; 5,6,7,8-Tetrahydroquinoxaline [TQ0100] is a 'meal in itself' with freshly-baked bread and peanut notes!
