Lactones

gamma-heptalactone

As the name implies, being derived from the Latin "lactis", milk, a number of these have dairy applications, especially the six-membered delta-lactones such as delta-decalactone [DL3100], but they are also invaluable for fruit flavours, and gamma-nonalactone [NL1090] is more "coconut" than coconut itself! The less well-known gamma-heptalactone [HL0700] has a very substantive sweet, coumarin, coconut odour.
